Flavor savers

Salt is the major component in marinading rubs and used as a carrier of the various flavor generated by the spice composition. Without salt there would be little flavor transported at all. The downside is that salt extracts natural juices from the protein depleting its moisture content. Our solution was to surround each salt crystal with a specialized coating and process. This isolates the salt from the protein until the time of cooking. That way the natural juices are retained providing the consumer with a tender and juicy cooked entrée.
